Galette

200g flour (buckwheat preferred)
1 Egg
½ Litre of full cream milk
Pinch of salt
Oil / butter for frying.

Mix flour milk and egg together in blender

Let the batter stand for c. 1 hour

Pour enough batter into oiled frying pan to cover the base of the pan.

Distribute the batter by 'swirling' the pan (wrist action)

Cook until the top resembles a crumpet (pin prick holes all over)

Flip galette over and cook the other side.

Server onto warm plate.

This mix will make enough batter for 8 galettes, normally use half the mixture for 2 of us.

Galettes cook best on a high heat as you would use for Pancakes
